I got this recipe for Pumpkin Chocolate Chip Cookies from www.loghomeu.com. The cookies are super moist and delicious. They have been a big hit.
1 cup butter (2 sticks) softened
1 1/2 cups sugar
1 egg
1 15oz can pumpkin
1 tsp vanilla
2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
12-16 oz chocolate chips
1/2 cup almonds (optional)
Cream butter and sugar with mixer. Add egg, pumpkin and vanilla. Mix well. Combine flour, baking soda, baking powder, cinnamon, and nutmeg. Add to pumpkin mixture. Fold in chocolate chips and almonds. Drop by spoonfuls onto foil-lined cookie sheet. Bake @ 350 for 15-17 minutes. (I only put them in for 13 mintues, my oven tends to be hot) Makes 2-3 dozen
